How we make noodles

Dough is mixed in-house, rested, rolled, and cut to order for each service. Ageing builds bite — the al dente snap that holds in hot broth without going soft.

Broths lean Japanese–French: jidori chicken with truffle seasoning, tonkotsu depth, and spice layers that respect the noodle rather than bury it.

No theatrics. Just flour, time, heat, and a kitchen that knows the difference.
